Glazed Apple Maple Coffee Cake

  • 1 box cinnamon streusel muffin mix (Betty Crocker or Krusteez)
  • ½ cup water
  • ¼ cup vegetable oil
  • 2 eggs
  • 2 small to medium-sized apples – peeled, cored and diced small
  • ¼ cup pure maple syrup
Pre-heat oven to 425 degrees. Grease 8x8 square pan and set aside. Mix all six ingredients and pour into prepared pan. Sprinkle streusel topping from box on top of cake and pat down. Bake for 30 minutes. Prepare glaze according to recipe below and set aside to cool. Remove from oven and cool for 10 minutes on wire rack. Cut through cake to yield 12-24 Pieces. Pour glaze over top. Allow to cool for at least 10 more minutes before serving.  NOTE:  If you don’t like it as sweet, pour half the glaze on.  You can always add, but you cannot take away once it’s on there. Glaze: 
  • ¼ cup butter
  • ½ cup maple syrup
  • ¼ cup packed brown sugar
Melt butter in small sauce pan. Stir in other ingredients and bring to a boil. Stirring constantly, cook for 2-3 minutes. NOTE:  Stirring will keep this mixture from boiling over once it starts boiling. Recommend paying full attention while making the glaze.  If the glaze cools too much, you can heat it gently.  It just needs to be thin enough to pour.
