15 Minute Refrigerator Dinner

If you're anything like me, deciding what to have for dinner can be a challenge. There are nights when “real life” happens and I find myself asking the same question that I really want to avoid: What can I make for dinner? For times such as these, having a few staples on hand can really make a difference! Last night was one of those nights. I opened the refrigerator and thought, “What can I make that's quick, healthy, and delicious?” Ahhhh…I see the leftover chicken and some vegetables, and the light goes on…Sauté the chicken in EVOO (extra virgin olive oil). Slice and dice the green bell peppers, onions, spinach, and cherry tomatoes (or any other vegetables that your family likes). Sprinkle with salt, pepper, and fresh or dried basil. Then sauté in the pan together for about 5 minutes. Serve by itself or with a side of rice, pasta, or fresh tortillas! Voila… dinner is served! “Real life” does happen. At the end of a busy day, our desire is to serve our family a nice meal, but sometimes we simply run out of ideas. Here's one recipe that I hope will lighten your evening load and leave you with more time to relax and enjoy your family.
